I’m a big fan of simplicity — rip everything out until you have the absolute basics. For me, the Pizza Margherita is the pinnacle of pizza. I’ve eaten at more pizza restaurants than I can count in Tokyo, and my rule is — the first pizza I’ll order is Pizza Margherita. Based on this pizza, I’ll decide whether I want to visit the restaurant again.

The Pizza Margherita has been a good measure of taste for me because it’s the building blocks of a good pizza — a good dough, sauce, cheese, and basil. If a restaurant can’t get these four ingredients right, there’s no way they’ll be able to work with more complex ingredients.

All of the pizzas I review here are Pizza Margherita. Sometimes I’ll go multiple times and taste different pizzas, but the main review is of the Margherita.
